Staying on a ketogenic diet is almost as important as finding the type of foods you are happy to eat on a daily basis. There are so many temptations out there that can derail your journey. Staying organised and prepared is key to success. Finding ways to keep things interesting is going to help you keep eating the right foods and stay on track. We’ve got four delicious keto meal prep ideas that can be tweaked in various ways to keep things interesting.
Starting a Ketogenic Diet
Ketogenesis is basically just a metabolic state that can be achieved with a very low carbohydrate diet. The body doesn’t have access to easily available energy it needs to break down fatty acids to create sugars. This is a very simplified explanation and you can find more information about the science behind ketogenesis here.
Given that you are seriously going to limit your carbohydrate intake to get into ketogenesis there are a lot of foods that instantly become a no no. One of the most difficult things about starting a ketogenic diet is working out what you can and shouldn’t eat. There are some great resources online and apps that can help with tracking a keto diet. Having somewhere to list what you have eaten is great for monitoring what you are consuming and making sure you are getting the right nutrition every day,
Zoodles and Meatballs
A spiralizer is a great kitchen gadget for keto dieters. It lets you create replacements for things like noodles and spaghetti. Zoodles are made from spiralized courgette. You can add them to stir fries and soups, but they can also be delicious with Italian style meatballs and a low carb sauce.
The meatballs can be made from beef, chicken, turkey or lamb mince, depending on your preference. To make the sauce you just need a white onion, some garlic, a tin of tomatoes and some italian herbs, but you can also add in some keto-friendly vegetables such as mushrooms or spinach if you want to include them.
If you like to eat fresh curries then cauliflower rice will mean you don’t have to lose your favourite meals. All that is needed is a fresh head of cauliflower. Just cut the very tops of the cauliflower to end up with small, rice-sized pieces that you can fry or quickly boil. It tastes delicious and has great texture.
Creating a curry normally means using lots of onions, but you can get away with a very small amount of onion per serving. Using spring onions can also reduce the sugar in the dish. Simply fry one small chopped onion in oil and add the garlic once the onion has gone translucent. Add a heaped tablespoon of curry powder and cook out the spices for a moment. Once you can see a change in colour add a tin of tomatoes and a tin of coconut milk. Once you have brought this up to the boil, add in some seasoned diced chicken and let this cook out. You may want to season it with salt and pepper too. Once cooked you will end up with is a delicious keto-friendly chicken curry sauce to go with the cauliflower rice.
Finding Meal Preps For Keto
Both of these meals can be made ahead of time, and you can make them in bulk and refrigerate/ freeze them for reheating later. It is great to find meals that are more like the sort of things you would eat normally. Having steak and eggs could get boring and isn’t very healthy either. Whatever you do, always try to make sure you are getting enough variety in your diet, including enough vitamins, minerals and fibre.
